By reducing yields, pre-harvesting, hand-picking and whole cluster pressing, we concentrate the aromas of the 35-year-old vineyard in the Siefersheimer Heerkretz into the must before fermenting it spontaneously in barriques (fourth fermentation) and further consolidating it.
The subtle hint of wood now underlines the powerful fruit and the finely integrated acidity, but without coming to the fore. This Riesling is clearly characterized by its high extract and enormous juiciness as well as the finely nuanced aromas from the spontaneous fermentation. A multi-layered aroma of stone fruit as well as subtle citrus and a slight hint of minerality. Very full-bodied on the palate, slightly sweet but above all juicy, spicy and mineral with a great length.
2021
In the cool autumn and winter, the Riesling took 5 months to ferment spontaneously, creating an exceptional cold fermentation aroma. Fermentation stopped naturally at a pleasant residual sugar level, which allowed for a further 8 months of yeast ageing.
The dense nose reveals ripe yellow fruit, raisins, apricot and some spicy notes such as honeycomb and a little petrol. Full-bodied on the palate, with sweet and ripe fruit, but also exciting spice.
2020
With 6.4g of residual sugar, the 2020vintage is significantly drier and slightly higher in alcohol, which underlines the density of the wine in a more opulent way.
